Savoury Cakes
Perfect for a picnic, as a starter or a light lunch, once the basic recipe is mastered, the rest is entirely up to the imagination, where these cakes are concerned. The basic recipe consists of eggs, flour, oil, milk, grated cheese and seasoning. Once these are mixed together the rest is up to you!
We’ve chosen an olive marble cake as a frim favourite here at the Wilde Kitchen served with a light green salad and a cucumber pickle. Below are some ideas – feel free to share any of your own!
- Blue cheese, walnut and pears
- Apple and camembert
- Green olive and ham
- Chorizo and sundried tomato
Olive Marble Cake
4 eggs
200g Self Raising flour
100ml sunflower oil, heated for 1 minute in microwave
150 ml milk
100g grated cheese
Salt/Pepper
For the flavouring
100g green olives, stoned and chopped
100g black tapenade (shop bought does the trick)
1teasp. Herbs de Provence
Preheat oven to 180°C/Gas mark 6
Mix the eggs with the flour. Add oil and milk gradually. Then add cheese and mix well.
Salt and pepper….
Divide mixture in two.
Add the green olives and herbs to one mix and the tapenade to the other.
Pour the green olive mix into a cake tin and then the tapenade mix.
Bake for 45 mins.
Serve at room temperature. May be served with a green salad as a starter/light lunch or simply with drinks…
