Salmon ‘en papillote’
So easy and so very tasty – I tend to go through phases in my cooking and at the moment it’s all about ‘en papillote’ – ‘in paper’
Preheat oven to 350°C/180°F and place a little water in the bottom of a pyrex dish. Place a large sheet of parchment paper on top an oil lightly. At this stage you can add veg – finely chopped leeks, sauteed lightly in butter and well-seasoned as well as a little crème fraiche – then place the salmon on top and make a parcel with the paper. Place in the oven for 15 – 20 mins and serve with rice or baby potatoes.
